Freedom sauce is my adaptation on the classic Hong Kong condiment, XO Sauce.
You may have seen other Chinese sauces (Lao Gan Ma, Sambal, Chili Crisp) but you've never seen XO Sauce. The term "XO" is a moniker meant to convey luxury and the use of top-shelf ingredients. It is the crème de la crème of Chinese condiments that's packed with dried shrimp, dried scallops and cured ham to deliver a haymaker of umami straight into your mouth!
My first taste of XO Sauce came when as a kid, I traveled to Hong Kong to visit my grandma. She would take me to "Yum Cha" (饮茶) in the morning and order a plethora of fried and steamed "Dim Sum" (點心) dishes. Unbeknownst to me, next to the dim sum was a small, white condiment dish filled with something deeply colored with visually appealing textures that any little American kid would be drawn to. My grandma instructed me to put some of that XO sauce on top of my dumpling and eat it together...foodgasm in my mouth, my world was forever changed!
The beauty of XO sauce is it goes well on almost any kind of food (eggs, bread, dumplings, rice) but it can also act as a cooking condiment and used to easily flavor any sauté or stir fry dish. Use it as a sauce on top of your favorite foods or use it to add flavor to your cooking!
